My girlfriend is a vegan and I am now about 80% vegan because she cooks for me 4 nights a week and always gives me left overs to take home. Tonite I am going to treat her to dinner at a vegan pop up at Tori 44,a ramen restaurant near my house. Here is the menu

Lol, the word "vegan" is tantamount to a swear word in these parts. I don't mind vegan or vegetarian food but I have a food sensitivity to soy. I wouldn't mind going to a restaurant like that but I doubt I'd find anyone to go with me.

The Rubens my girlfriend made are soy free,she made them with beets.
She made vegan hamantaschen tonite, they are also soy free.

I make vegan dishes a LOT more than not.
One of my favs is spaghetti sauce on pasta ( usually gluten free or half gluten/half legume base)
You've got to get the spices right, thick,chunky,and loads of thick mushrooms.You can add spinach or green peas but I like chunks of raw onion after cooking mixed in. You can get faux Parmesan, but not for me.
A really good vegan dish is wild or brown rice cooked w shredded veggies and touch of garlic olive oil and top w your fav beans.
Chili beans cooked in picante w some fresh peppers and onions chopped on top.
Rice wraps full of veggies or beans & rice( you can use any tortilla)
Dipping red or green sauces and guac are favs
Toasted green veggies w healthy oils, spices and chopped nuts
