rough amounts.... Aurie gets pissed at me cos I make recipes as I go....
for every kilo of beef... 2-3 tbls oil for frying plain flour, seasoned with salt n pepper
2-3 decent sized cinnamon sticks 6-7 green cardamom pods Table spoon each of coriander n mustard seeds 3-4 garlic cloves 3-4 dried chillis 6 cloves 2-3 kilos white onions, sliced finely 2 cans chopped tomatoes
cube the beef into wee chunks then roll in seasoned flour til coated
Heat the oil n gently fry off the spices. Now brown the beef in batches after turning up the heat.... seal the beef, don't stew it! Set it aside Once all beef is cooked, dump in the onions and stew them down til almost black (stirring often)
Put back the beef n add the tomatoes... simmer until beef is tender n then serve on rice or with breads
