Banana Chocolate Chip Muffins Pre-heat oven to 375 grease muffin tins (about 12 large)
2 c. flour (all whole wheat works)
1/2 c brown sugar
1 tbsp b. powder
1 tsp b. soda
1/2 tsp salt
3/4 cup chocolate chips
2 c mashed banana (about 4)
1/2 cup melted butter/marg.
1/4 c milk
2 eggs
1 tsp vanilla
In a large bowl combine flour, sugar, b powder, soda, salt and chocolate chips.In a smaller bowl blend banana's, melted butter, milk, eggs and vanilla.Add to flour lightly blend; fill muffin cups. Bake 18-22 mins; untill golden and a tooth pick comes out clean. Let stand for a bit and then turn out to a wire rack to cool.

Whole wheat Banana Bread
1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed banana (2-3)
1 tsp vanilla
2 cups whole wheat Flour
1 tsp B soda
1/2 tsp salt
1/2 cup chopped nuts (optional)
Preheat oven to 325Cream butter and sugar. Add and beat in the eggs,bananas and vanilla.In another bowl. Mix all the dry ingredients exceptthe nuts. Blend theliquids into the dry ingredients. Fold in the nuts. pour into a greased loaf pan.Bake for an hour or so.

My Mom's banana Bread
1/2 c butter
1 c sugar
3 mashed ripe bananas
2 tbsp soured milk (add a drop or two vinegar to milk)
1 tsp soda
1 tsp salt
2 c flour
1 c chopped walnuts or pecans (optional)
Cream butter and sugar add mashed bananas and sour milk; in another bowl mix the dry ingredients... combine put into a greased loaf pan and bake at 325 for approx. 1 hour
(yikes; this is an old recipe and I had to double check the amount of salt. I think that could easily be cut in half!)

The Best Banana Muffins
2 1/2 cups mashed bananas
2 eggs
1/4 c light molasses
1 c canola oil
1 c sugar
Mix well; all of the above ingredients and set aside.
In a big bowl combine:
1 tsp cinnamon
1 tsp b.powder
2 tsp b.soda
3 c whole wheat flour
Make a well in the dry ingredients and then pour in the liquid ingredients mix lightly. Fold in:1 c chopped walnuts (pecans)1 c raisinsSpoon batter into greased or papered muffin cups and bake in a pre-heated (350) oven for 15-18 minutes. (Store cooled muffins in the fridge)

A yummy alternative from a Company's Coming cook book:
Banana Oat Squares
6 tbsp butter or marg.
1/2 c. brown sugar
1 egg
1/4 tsp salt
3/4 c. mashed banana
2 c. quick cooking rolled oats
1/3 c. chopped walnuts
Cream butter and sugar. Add egg and beat well. Add the mashed banana and salt, beat.Add oats and nuts. Stir, Spread into a greased 8x8 inch pan. Bake in 350 oven for almost an hour until firm. Cool and cut into (25) squares.
