@estella I would love if you'd share how you bake cheese curds.
I rolled prawns and greens green chilies in tortillas dipped in tomato sauce with light taco seasoning.

Last night was a delicious gnocchi stew. Tonight was "bacon," "cheese" and tomato toasted sandwich and fried potatoes and mushrooms (done in the air fryer. Both meals were 100% vegan.

Under 90 degrees so I had hot tomato & green pea stew w sweet onion and garlic and toasted tapioca/brown rice bread and guac.mmmm mmmmmm

Had some Omelette and just 2 eggs nothing else as need to be careful with mouth. Some Basa on the go in the oven and over next few days I will get through some tuff I horded for a while only to replace the horde

I had spaghetti with beyond meat sausage. I have had their beef and liked it but the sausage was still a pleasant surprise.

Craving carbs these days as the weather changes.
Thinking angel hair pasta with garden tomatoes, a hefty portion of basil and some cheese. Drizzle olive oil.

A package of noodles, after which I was still feeling very hungry, so I followed that with about 10 pieces of licorice. I promised myself I would not work late anymore..., one day into that promise I worked 4 hours past my end time (for free).

I have been very slow to learn there are no rewards for doing such things and that the only person who suffers is me! Tonight, I had potatoes, onions and mushrooms with plenty of seasoning. That may not sound very appetizing but it was actually very good (kind of a fry-up thing) and was heaven compared to the noodles and licorice!!!

Winner winner, 'chicken' dinner. All vegan. The 'chicken' is actually king oyster mushrooms. Didn't really follow a recipe. Just tossed seasonings and stuff on the mushrooms and tossed into the air fryer. Surprisingly good!

^ Sounds good. Ive been trying to use my air fryer more. I got it for free with it being on sale, and then having a rebate coupon. With last years black Friday specials, I got a free electric griddle, too.
My youngest made herb roasted chicken yesterday, and then stuffed it with her home made fettuccini alfredo. She found some recipe online, and altered it to her liking. It was amazing, and a create way to change up the norm.

Sausage Casserole it will be tonight done in the slow cooker and it smells superb. It will be served with some sprouts and Butternut squash mash. Now, to be a good boy and not eat it all tonight 😎
Not used this Slow Cooker in a long time. I see it being used a lot this winter. I might try bake rolls in it haha

This was really good... Sauté one medium to large onion, two carrots, and 2 celery, all finely chopped. One sautéed, add about 5 cloves of garlic, also finely chopped. Only sauté for about a minute more after adding the garlic. Transfer that into a large pot and add four cups of water and 2 cups of vegetable broth. To that, add about 3 tablespoons of sweet paprika; 5 tablespoons of onion powder; 4 tablespoons of garlic powder and a teaspoon of dried thyme. Add salt and pepper to your liking. I add quite a bit of pepper. In a bowl, add about a ½ cup of nutritional yeast to a cup of plant based milk of your liking (I use unsweetened oat milk but most would probably use a full fat coconut milk (I don’t like it 😊), along with about a tablespoon of red wine vinegar, about one tablespoon of soy sauce and about a teaspoon of tamari, if you have it. Whisk well. Then add to the pot. Chop 6ish potatoes into fairly small chunks and a fair size head of broccoli into medium and small chunks. Add to the pot. I wanted it a bit creamier so I boiled the potato in a separate pot and put the slightly cooled off results into the food processor, along with the soaked cashews below. And finally, soak about a half cup of raw cashews for about 30 minutes, drain, then puree and add them to the pot. Simmer everything on medium for about 15 – 20 minutes (until all the vegetables have reached the softness you like), then add some red pepper. I like a lot so added about 2 teaspoons but you might want to go light on that. I just have a thing for hot, spicey food. This is all vegan but you don’t need to make it that way. For example, you don’t need to use a plant-based milk. And vegetable broth can easily be switched out for chicken broth. And the nutritional yeast can be switched for real cheese. It makes quite a bit so prepare for leftovers and enjoy!!!

A full medium Chicken is being slow cooked at the moment and first time I've tried it so hoping it is really nice and should do me for a few days, unless, I go mental on it.
