This is one of my favorites!
Pumpkin Cookies
1 cup butter/marg 2 cups brown sugar 4 eggs 2 cups pumpkin puree 4 cups flour 2 tbsp b powder 2 tsp salt 1/2 tsp ginger 4 tsp cinn. 1 tsp nutmeg
Cream butter and sugar add pumpkin and eggs. In separate bowl mix all the dry ingredients. Combine and chill for 1/2 hour or so. Drop by spoonfull on lightly greased sheet and bake at 400 for 10-12 minutes
Brown Butter Frosting
CAREFULLY brown 1/2 c butter (has to be the real thing here) in a saute pan whisk in 4 to 4 1/2 icing sugar add 1/4-1/2 c water to make thick frosting. Dip in the tops of your cookies. add tsp's of water as frosting thickens.

Lemon Poppy Seed Shortbread
1 cup softened butter 1 cup icing sugar 2 tbsp poppy seed grated rind of one lemon 2 cups flour ~ 2 tbsp white sugar
Beat butter and icing sugar until fluffy; stir in rind and seeds. Gradually blend in flour. Gather dough into a ball (chill of sticky). Roll out to 1/4 inch thickness and cut into rounds pricking the centers with a fork... or press into 9x9 pan using a fork to mark out cookies/perforate. Sprinkle with the white sugar. Bake at 300 for 20-25 minutes for rounds or 35 minutes for square.

Jumbo Raisin Cookies
In a saucepan bring 2 cups raisins and 1 cup water to a boil; simmer for 5-10 minutes and, then let cool.
Cream together 1 cup either butter or, shortening and 2 cups sugar, add 3 eggs beat well. Blend in cooled raisins with liquid and, 1 1/2 tsp vanilla.
In a separate bowl mix: 4 cups flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp allspice 1 cup chopped nuts
Add to creamed mixture and combine thoroughly. Drop from spoons onto greased cookie sheet. Bake at 400 for 10-12 minutes.
These are even better the next day! It is also a very large batch of cookies.

Lemon Squares
Heat over to 350'.
Mix together:
1 cup flower, 1/2 butter & 1/4 cup powdered sugar. Press evenly into square pan. Build the edges up a bit. Bake for 20 minutes.
Beat together until light & fluffy:
2 eggs, 1 cup of sugar, 1/2 tsp baking powder, 1/4 tsp salt & 2 tbsp lemon juice.
Pour over crust. Bake until no indentation remains when touched in the center - about 25 min.
Cool. Cut into squares.

Peanut Butter Hershey Kiss Cookies
Cream well:
1/2 cup shortening 1 cup sugar 1/2 cup brown sugar
Add:
1 egg 1 tsp vanilla 1 cup peanut butter
Then add:
1/2 tsp baking soda 1/2 tsp salt 1 1/4 cup flour
Roll into 1 inch balls, then place on cookie sheet. Top with kiss. Bake 10 minutes at 350'.
