Irish stew and Scots hot pot both involve mutton... nane o thon lamb... use one that lived.
warning... no measurements given..
Brown chunks (massive cos will break down) of mutton as dry as ye can... healthy gits us Scots None o this fancy shit like deglaze.... just set aside the meat then add water n HUGE chunks o veg... mouthful size... potato, caeeot, parsnip... anything, really. No onions or else it'll go sour after a day or two chuck in the meat... n let it stew. Dumplings with it is good and easy cooked in the pot.
pre half cook the totties in well salted water.

Use stock instead of water if using the wee baby sheep
A proper Irish stew should end up like the biggest, lumpiest soup ever, but us Scots love dumplings chucked in
Had to laugh... had a look at some recipes... BBC site uses celery, bay leaf n other shite that was not in Ireland when the stew was put together. Salt, yeah... pepper possibly. More likely common herbs like sorrel
