Miss you Grey! Love from NC, and hope this fall is a mild one for you. I never get tired of ground chicken. I make everything and anything with it. I have a freezer full of venison right now; its been bow season in these parts. Made some jerky, ground most of it, and kept some steaks. Kinda gamey and tough meat this year. Lil' boo gave two of her kills away all cleaned up and packaged to several of the neighbors. My brother came down and brought his frozen solid back to NY in coolers. Its been a great bow season, and this county lets you spot light at night to keep the population down.

Howdy folks, and wishing y'all well in this crazy messed up world. Those chickens I grabbed to tide me over til my new ones began laying are rebounding quite nicely. (almost a shame to put 'em in the freezer next week:) Good job on the venison little miss "bad one". lol I used to think it was a bit gamier than I cared for until I found an old fart who told me that the rankness is almost exclusively in the fat, and that if one was really picky about removing every little bit of fat that most people couldn't even tell that it was wild meat. Seemed pretty true to me so I tested on a friend who swears that he can't stand the taste of wild meat. I ground it up and BBQed a few burgers without any mention. He was going on at great length about how good the burgers were when I broke the news to him. Til this day I think he believes I was pulling his leg. lol ...and regarding the weather..... it's been a beautiful Fall. (I even have tomatoes still cranking out in the garden) It has been a far nicer Fall than our Summer was, except the shorter days and longer nights are starting to weight a bit heavily. C'est la vie

You are correct; trimming the fat helps a lot. We also marinate it all in a mixture of apple cider vinegar, local wine (usually a sweet red), and some brown sugar over night. That helps, but this year we had quite a few bad storms and hurricanes. They just didn't get enough time to graze through the corn fields. Im sure the farmers liked that. Im happy with any free meat. Im gonna make some more jerky I can trade with some commercial fishermen. They love that stuff when out at sea, and I love fresh fish.

Need to redo my whole back garden. I have raised beds and sunken paths, which is inimical to my current physical condition. Need to level things out, have new fresh plantings. Anyone else redoing their gardens?
